About: CONICET PhD fellow Marina Navarro is based at the Laboratory of Molecular Microbiology at the National University of Quilmes. Her research focuses on the valorisation of food industry waste for the sustainable and low-cost production of dried lactic acid bacteria biomass with potential applications in the food sector. She investigates the growth and antimicrobial properties of the Lactiplantibacillus plantarum UNQLp11 strain, which produces plantaricin A, a bacteriocin with both pheromone and antimicrobial activities that may contribute to food stabilisation and preservation. As part of the IDPFun2 collaboration with the Bio2Byte laboratory, her current work focuses on the characterisation of plantaricin A, including its structural preservation and molecular evolution.
